On another online game I play, they had almost 100 people working on the game. So if any major fixes needed to happen, no problem! They can easily do both at the same time.

I don't see how this is a problem. There are tiny companies doing fine - The company that makes Minecraft (and currently producing Scrolls), is working on a mobile version, xbox 360, content updates every couple of weeks, developing a whole other game, and they are also producing a whole new gamemode, which while provide a whole lot more content to Minecraft. They probably have less people working for them than Disney.
You don't need 100 devs working on it, you just need some who care about what they do.
