What does your task as you to do?

They can be found in many places, so I've spotlighted some of the easiest.

Swamp Gators -- practically everywhere you look on Cuba. Also in most of the jungle & swamp areas on Tortuga & Port Royal.
Rock Crabs -- on most of the islands. Devil's Anvil is the easiest island to sail to, though you can also find a Rock Crab right inside the entrance to the Misty Mire on Tortuga.
Giant Scorpions -- also on Devil's Anvil and in the Wildwoods on Tortuga. But there's one that spawns right inside the entrance to the Wicked Thicket on Port Royal that is easy pickin's.
Cave Bats -- Also right inside the entrance to the Wicked Thicket. (Kill it along with the Giant Scorpions there.) They can also be found at the rear of the Wildwoods, and in most caves (Murky Hollow on Port Royal, Thieves' Den on Tortuga).
Dire Wasps -- This is the toughest enemy in this round of beasties and can be found near the front of King's Run on Port Royal. Tons of them are out on Isla Perdida, but save yourself the trouble of sailing there.

Location Guide:
Misty Mire -- entrance near the Tortuga Docks, just past the jail.
Wildwoods -- entrance behind the Faithful Bride Tavern on Tortuga, near the woodcutter.
Wicked Thicket -- entrance at the far end of Port Royal, down past the shipwright.
King's Run -- entrance past the graveyard on Port Royal. (It's the place where you first saw Tia Dalma in the game.)

Final note:
Just make sure you are targetting the right enemy. You don't need Big or Huge Gators, for example -- just Swamp Gators. And, believe me, there is a world of difference between a Giant Scorpion and a Dread Scorpion.
