There are a few different applications I know of.

Camstudio (Free)

To make a video you do need a program like Zep said to capture it. Free ones or perhaps something else you already have that came with a camera you own or something.

After capturing it, think what you might be looking for is the sticky at the top of this page, in how to format, produce and list it type things.

Though out dated and mostly dead links, it is a good walk through.
