For the bridges, you may want to consider turning to one side and having your crew shoot from that side, taking out the left bridge gun, then the middle (where applicable), and then the right one. For the last bridge though I'm pretty sure the right bridge gun does more damage, so take it out first if you can. This and having a strong crew, even if it's just 4 to 6 people, has helped in the successful boss battles that I've been in. For the Goliath just have everyone get to the left side of the boat and as soon as the cut scene of the ship ends use ramming speed to get out in front, and fire away of course.
