You also get coins (though small amounts) for killing cadets roaming the grounds.

Also, the other card game in Port Royale, Texas Hold'em is a good way to get coins. Blackjack is a little easier if you know nothing about poker.

Also, sinking, and helping to sink, navy ships will get you a share of the bounty!
