Most of the time people are sailing for 2 purposes, gold/plunder, and quest requirements. The War Galleon holds more than all of them allowing you to stay out longer, get more gold/plunder and get more of those quest requirements before having to go in.

2 Reasons to use a War Frigate (IMO). You need the extra firepower/strength to be able to survive (my war galleon seldom EVER sinks anymore unless its a glitch). And you want those front cannons for your crew. The front cannons on a War Frigate are cool, but have you noticed that if your on the front cannon, and your crewmate is at the wheel, that you do not get crew bonus? I have a War Frigate but its usually my LAST choice, because it fills up too quickly.

Since I usually (always) have crew matching on, the war frigate is the last thing I want to drive. There is always one, who finds their way onto my crew. On the war galleon, those idiots can do no harm - on the war frigate, it is a tremendous challenge to survive all the way back to the port. The only thing worse in this regard, is a war sloop, as it leaves you exposed AND has no hull.
