Port Royal has one that spawns fairly rapidly.
Tortuga has 4 but I can only fight 2 of them and w/o help they beat you (well me) up.

Giant Crabs can be found on Tortuga.
For those still looking they are past the jail on the beach away from town... There's a wooden walkway. Head down that and you can't miss them. Take a few friends unless you've leveled up quite a bit.
