In the "Royal Anchor" in Port Royal (a tavern), the bartender girl, Josie McReedy (or something, not sure about the last name, you can find her sweeping behind the bar) - she gives you good quests. In the mercenary quest, you get paid 110 for killing 6 grunts. The grunts themselves give you quite a bit of gold. As for her "restocking" quest, you bomb one ship at a time (per check in with her), and for each ship, she pays you 35 gold. Also, Sam Seabones offers certain good quests.
In order to find other quests, you can find NPC characters that have a little golden scroll above their heads.
