I noticed that, too! Even after I saw La Schafe like that, I saw a Male Variant. Guess it would sometimes vary between the genders.

Well, I'm not one to be positive that it's not female...
But there were males with long hair back that long ago, and some did wear their hair in buns like that.
But that La Schafe does look small enough to he female xD

LaSchafe seems to be a little bit glitched, and he/she/it spawns as any random Jumbee now, so he/she/it appears that way. It is an easy fix. If it's reported to POTCO I'm sure that they could easily fix it in a very short time.
